Brown the butter in a light-colored saucepan over medium heat, stirring occasionally. Remove from heat at the noisette stage (~292°F / deep amber). Pour into a heat-safe bowl, add 2 tablespoons cold water. Cool 15 minutes at room temperature, then refrigerate 20–30 minutes until semi-solid.
Combine semi-solid brown butter, white sugar, and brown sugar. Mix on medium speed 2–3 minutes until smooth and slightly grainy.
Add 2 whole eggs and 1 egg yolk one at a time, mixing briefly between additions. Add vanilla extract. Mix 1 full minute. Mixture should look glossy and homogeneous.
Sift flour, baking soda, and salt together. Add to wet mixture in three additions, mixing on low between each. Stop as soon as no dry flour is visible.
Fold in chocolate chips with a spatula. Cover bowl with plastic wrap. Refrigerate minimum 30 minutes (1 hour preferred, overnight optimal).
Preheat oven to 375°F (190°C). Portion dough into ~52g balls on parchment-lined sheet pan, spacing 2 inches apart. Bake 10–12 minutes until edges are set and golden brown, centers look slightly underdone. Rest 5 minutes on the hot pan before transferring.

Always weigh the brown butter after cooking. Volume is unreliable — water evaporation varies by pan, heat, and stirring frequency. The finished brown butter must weigh exactly 226g before it enters the dough.
Do not skip the chilling step. In our preliminary test runs, unchilled brown butter dough spread significantly more, moving the result away from the dense, chewy texture this recipe targets. 30 minutes is the minimum; 1 hour is the standard in the lab.
Use a light-colored saucepan. The transition from golden to deep amber (noisette stage) happens in seconds. A dark pan makes it impossible to see this shift coming.
