Brown butter is the recipe's only fat, providing the caramelized amber crust, the dense moist crumb, and the hazelnut-caramel flavor that defines this bake. Instructions
Preheat oven to 400°F (200°C). Butter and lightly flour 12 standard financier molds (4×8 cm) and place on a baking sheet.
Brown the butter: Melt butter in a light-colored saucepan over medium heat. Swirl every 30 seconds. When foam subsides and milk solids turn deep amber at the bottom of the pan (approximately 290–295°F / 143–146°C), and the aroma shifts to hazelnut-caramel, remove from heat immediately. Pour into a bowl. Cool for 10 minutes — the butter must be warm, not hot, before adding to the batter.
In a large bowl, whisk together almond flour, sifted powdered sugar, all-purpose flour, and fine sea salt until combined.
Add egg whites and honey to the dry mixture. Stir until smooth and slightly glossy. The batter will be thick.
Stream the cooled beurre noisette into the batter in a slow, steady pour, stirring continuously. Add vanilla extract. Mix for 30 additional seconds.
Fill the prepared molds to two-thirds of their height. Do not overfill — the financiers rise slightly during baking.
Bake 12–14 minutes. The edges should be deep amber and pull slightly from the mold walls. The center should spring back when lightly pressed. Cool in molds for 5 minutes, then unmold onto a wire rack.
Nathan's Tips
Weigh the brown butter after browning. Start with 140g of unsalted butter. After browning, the beurre noisette should weigh approximately 115g. If you're significantly under, the batter will be drier than expected — the water loss during browning is part of the recipe's structure.
Noisette stage vs. past the noisette stage: The window between correct noisette and overbrowned butter is about 15–20 seconds over high heat. Watch the milk solids at the bottom of the pan continuously during the last 60 seconds. Deep amber and nutty aroma = correct. Near-black and sharp smell = past the stage; the batter will be bitter.
Storage: Room temperature in an airtight container, 3–4 days. Best on day two — the crust softens slightly and the flavor deepens. Refrigerate for up to one week; bring to room temperature 20–30 minutes before serving.
