A firm, clean-slicing no-bake strawberry cheesecake built on the 40°F cream cheese protocol. No gelatin, no baking — just cold cream cheese, cold heavy whipping cream, and a graham cracker crust. This is the control recipe from our 3-temperature test: the formulation that produced a clean cross-section at 12 hours and a perfect slice at 24. Tested twice in the Ovenlytic Lab.
1½cups180 g graham cracker crumbs (approximately 12 full sheets, finely crushed)
6tbsp85 g unsalted butter, melted and slightly cooled
2tbsp25 g granulated sugar
¼tspfine salt
For the Cream Cheese Filling:
16oz2 × 8 oz / 450 g total full-fat block cream cheese — straight from fridge at 40°F — do NOT let warm
¾cup90 g powdered sugar, sifted
1tsppure vanilla extract
1tbsp15 ml fresh lemon juice
1cup240 ml heavy whipping cream — very cold (40°F)
For the Strawberry Topping:
2cups300 g fresh strawberries, hulled and thinly sliced
2tbsp40 g strawberry preserves, warmed
1tspfresh lemon juice
Instructions
Make the Crust. Combine graham cracker crumbs, melted butter, sugar, and salt in a medium bowl. Mix until crumbs resemble wet sand and hold together when pressed. Press firmly and evenly into the bottom and 1 inch up the sides of the springform pan. Use the flat bottom of a measuring cup for even, compact pressure. Refrigerate for 20 minutes while you prepare the filling.
Verify Cream Cheese Temperature. Remove cream cheese from the refrigerator immediately before mixing. Insert an instant-read thermometer into the center of each block and confirm: target is 40°F. Unwrap and use immediately. Do not leave on the counter.
Beat the Filling Base. Place the cold cream cheese in the mixer bowl. Beat on medium speed for 2 minutes until smooth and completely lump-free. Scrape down the sides. Add sifted powdered sugar, vanilla extract, and lemon juice. Mix on medium-low speed for 1 minute until fully incorporated. Do not overbeat — you are building a base, not incorporating air.
Whip the Cream. In a separate chilled bowl, whip the cold heavy cream on medium-high speed until stiff peaks form, 3–4 minutes. Peaks should hold their shape when the beater is lifted straight up. Underwhipped cream is the second most common cause of a soft set.
Fold and Combine. Add one-third of the whipped cream to the cream cheese mixture. Fold gently with a rubber spatula, using wide circular strokes, until no white streaks remain. Add the remaining whipped cream in two additions. Stop folding the moment the mixture is uniform — deflating the cream reduces the air structure that supports the set.
Fill and Smooth. Pour the filling into the prepared crust. Smooth the top evenly with an offset spatula. Tap the pan gently on the counter 2–3 times to release large air bubbles. Press a sheet of plastic wrap directly against the surface of the filling.
Chill. Refrigerate undisturbed for a minimum of 12 hours. 24 hours produces the firmest, cleanest slice. Do not freeze. Do not move the pan during the first 4 hours.
Finish and Serve. Run a thin offset spatula or knife around the inside edge of the pan before releasing the springform latch. Toss sliced strawberries with warmed preserves and lemon juice. Spoon topping over the cheesecake immediately before serving — not in advance, as the moisture will soften the surface. Cut with a hot, dry knife (run under hot water, wipe dry between cuts) for the cleanest slices.
Nathan's Tips
Temperature is not optional. Cold cream cheese is what makes this recipe structurally reliable. Cream cheese at 75°F produced a cheesecake that was still soft at 24 hours in our test. Take it straight from the fridge to the mixer.
Stiff peaks matter. Scrape down the mixer partway through whipping — heavy cream can appear whipped on top while remaining loose underneath. A true stiff peak holds its shape completely when the beater is lifted.
Storage. Refrigerate covered for up to 4 days. The crust softens slightly after day 2 — serve sooner for the best textural contrast.
