Unsalted butterroom temperature (65°F) — 1 cup / 226g
Vegetable shortening — 1 cup / 190g
Powdered sugarsifted — 4 cups / 480g
Heavy cream — 3–4 tbsp / 45–60ml
Pure vanilla extract — 2 tsp / 10ml
Fine sea salt — ¼ tsp / 1.5g
Instructions
Cake Layers:
Preheat oven to 350°F (175°C). Grease and flour two 8-inch round cake pans. Line bottoms with parchment circles.
Whisk together flour, baking powder, and salt in a medium bowl. Set aside.
In a stand mixer fitted with the paddle attachment, beat butter and sugar on medium-high until light and fluffy, about 4 minutes. Add vegetable oil and beat 1 minute more.
Add eggs one at a time, beating fully after each. Add vanilla extract.
Reduce speed to low. Add flour mixture in three additions, alternating with milk (begin and end with flour). Mix until just combined — do not overmix.
Divide batter evenly between prepared pans. Bake 30–35 minutes until a toothpick inserted in the center comes out with a few clean crumbs.
Cool in pans 15 minutes, then unmold and cool completely on a rack — minimum 60 minutes before frosting.
50/50 Buttercream:
Beat butter and shortening together on medium-high for 5 minutes until very light and airy. The longer mixing time increases air incorporation and improves structure.
Add sifted powdered sugar one cup at a time on low, beating fully before each addition.
Add vanilla and salt. Add heavy cream one tablespoon at a time until spreadability is reached. Beat on medium-high for 2 more minutes.
Apply a thin crumb coat, refrigerate 20 minutes, then apply the final layer. Refrigerate the assembled cake until 30 minutes before serving.
Nathan's Tips
The butter must be at 65°F — not warmer. Soft butter over 70°F already partially breaks the emulsion before you mix in the shortening, and no amount of beating corrects it. Use a probe thermometer on the butter block before starting.
Refrigerate until 30 minutes before serving, not the night before at room temp. The assembled cake can hold at room temperature for approximately 28 minutes at 95°F in summer conditions — that's your structural window at an outdoor event.
Weigh your powdered sugar. Volume measurements of powdered sugar compact inconsistently — 4 cups measured by scoop can vary by up to 60g, which directly affects the stiffness of the final buttercream and its heat resistance.
