Why sugar makes meringue watery

As the foam ages, that sugar-rich film keeps drawing moisture, and the excess has nowhere to go.

So the real question isn’t how to remove the water. The water is going to be there — egg whites are about 88% water to begin with. The question is where you park it. Free water is water not bound to anything, so it drifts to the surface. Bound water is locked into a matrix and stays put. A cooked cornstarch gel gives the free water a new home. Before you tackle the fix, it helps to pick the most stable meringue base first — Swiss and Italian handle humid days better than French.

How to make the cornstarch gel (step by step)

The good news is the gel takes about 90 seconds and one small saucepan. Nothing fancy. Here’s the method we run in the lab.

  1. Measure. Per egg white, use 1 teaspoon cornstarch and 1 tablespoon cold water. For a 4-white batch, that’s 4 tsp cornstarch and 4 tbsp water.
  2. Whisk cold. In the saucepan, whisk the cornstarch and water together off the heat until it looks like thin white milk. If you add heat first, you’ll get lumps.
  3. Cook until clear. Turn the burner to medium-low. Stir constantly. In about 60 to 90 seconds, the mixture goes from opaque white to translucent and thick — think loose petroleum jelly. That’s your gel.
  4. Cool it. Scrape the gel into a small bowl. Wait until you can rest the bowl on your palm comfortably. Warm is fine. Hot will thin your foam.
  5. Fold, don’t dump. Whip your egg whites and sugar to soft peaks, then add the gel a spoonful at a time while the mixer runs on medium. Finish on high to stiff, glossy peaks.

What didn’t go as planned on our first try? We whisked the gel in straight off the heat, still steaming. The whole foam slumped. Peaks that had held for a minute deflated in front of us. The fix was temperature, not ratio. A cooled gel folds in cleanly and locks the structure. This step benefits from a clean sugar base — make sure the sugar is dissolved before you add the gel, or you’ll trap grit inside a smooth matrix.

How much and when to add it

The ratio matters less than the moment. In three side-by-side tests, we ran the gel from 0.5 tsp to 1.5 tsp per egg white. All three trapped water better than the plain control. The 1 tsp version gave the cleanest peaks and the driest surface, so that’s our house number. Below 0.5 tsp, you lose the effect. Above 1.5 tsp, the meringue starts to taste faintly starchy on the tongue.

Timing is where most home cooks get burned. Add the gel too early — before soft peaks — and you dilute a foam that hasn’t formed yet. Add it after stiff peaks, and you break a structure that’s already set. The window is soft peaks: whites that hold a curl and flop over gently at the tip. That’s your signal.

In our July run at 75% relative humidity, the gel batch pooled about 2.8 mL of free water over 24 hours. The plain batch pooled 9.5 mL — more than three times as much. That’s the whole story in two numbers. Quick safety note (baked meringue)

One housekeeping point. Raw egg whites carry a small salmonella risk, so a fully baked meringue is the safer play for kids, older adults, and anyone pregnant. The USDA recommends cooking egg dishes to an internal temperature of 160°F (71°C). A Swiss or Italian meringue heats the whites during whipping and passes that bar comfortably. A French meringue baked into a shell or a pavlova also passes if you hold the oven at 200°F long enough for the center to reach 160°F. If you’re serving a soft, unbaked topping, use pasteurized whites.
